I made cauliflower crust pizza! (recipe here)
It was pretty good! Obviously can't really compare it to regular crust, but when you smother it in bbq sauce, you don't really taste the difference!

I made mine bbq chicken (which, of course, is not vegetarian) but you can easily change the toppings so that it will be vegetarian

I also made some delicious roasted potatoes

I made mushroom and spinach pizza, with two types of cheese (cheddar+mozarella). Spinach on rather plain pizza is sooo tasty. :D

Roasted Red Pepper Mac & Cheeze

This is not only a vegetarian dish, but vegan, as well. This was my first time making it and it turned out pretty well. It was creamy and very rich; some people will like that, but for people like me, it was a little too rich. If I were to make this recipe again, I would put less pizza seasoning in it. However, if I wanted to make vegan mac and cheese again, I think I would try to find a recipe that wasn't as rich.

Couscous with red peppers, courgettes, eggplants and basil. Delicious!
