Ingredients:
1 tsp saffron strands
2 shallots, roughly chopped
3 garlic cloves, crushed
1 tsp chopped fresh ginger
2 tsp coriander seeds
1/2 tsp black peppercorns
2 cloves
seeds from 2 green cardamom pods
1 tsp ground turmeric
1 fresh green chilli, chopped
1/2 tsp salt
2 tbsp ghee/clarified butter
1 tsp whole black mustard seeds
500 g raw tiger prawns
300 ml of coconut milk
300 ml natural yoghurt
basmati rice cooked to serve
Method:
Soak the saffrom in 50 ml of tepid water for 10 minutes.
Put the shallots, garlic, spices and salt into a spice grinder or mortar and pestle and grind to a paste.
Heat the ghee/clarified butter in a saucepan and add the mustard seeds. When they start to pop, add the prawns and stir over a high heat for 1 minute. Stir in the spice mix, then the coconut milk and yogurt. Simmer for 20 minutes.
Spoon prawn mixture into serving bows, top with basmati rice (I put the sauce on top, oops) and drizzle over the saffron water.

In retrospect, this definitely involved more than one dish (to cook the rice in, to serve it to my family) but it was in a one-pot recipe book and I'm a novice so
Ingredients: 1 teaspoon butter
1 tablespoon flour (self-raising or plain is fine)
1 mug of milk
1 mug of grated cheese (or more to taste)
Salt and pepper (optional)
Herbs (optional)
Put the butter, flour and milk into a bowl, whisk, and then microwave for one minute. Repeatedly microwave for 1 minute, stirring in between each time, until the sauce starts to thicken. Then, add the cheese and salt and pepper. Cook on 1 minute intervals until the cheese has blended into the sauce.
This can be cooked on the hob in a saucepan, but the microwave option is easy to do You could add pasta and bake in the oven to make Mac & Cheese.
At the weekend me and my brother made some roasted red pepper soup! I kinda wanted to do parsnip and ginger, but the ingredients for this one are the sort of thing we have in anyway!

Okay, so... it looks kind of greenish, but I think it's just the combination of the yellow and green tablecloth and the grey lighting coming through red and orange curtains!
It's couscous, with tomatoes, peppers, green peas, chickpeas and tuna!
For my one-dish meal I made mac and cheese! Specifically, a modified version of Budget Bytes' Miracle Mac N' Cheese. I made my version with lactose free milk and lactose free old cheddar, since I am lactose intolerant. I also seasoned mine with different spices - garlic powder, onion powder, paprika, red pepper flakes, and black pepper.
The pasta cooks right in the milk!
The finished product! I didn't get any pictures of it in bowls because my boyfriend and I ate it too quickly. It was delicious and I would definitely recommend this recipe!
