I use a very simple recipe. It makes about four, depending on the size/thickness of the pancakes.
1 cup SR flour
1 cup milk
1 egg
Rice bran oil for frying
Gradually incorporate the milk to the SR flour, mixing vigourously with a fork to make sure there aren't any lumps.
Once you have a smooth consistency, add the egg and whisk until combined.
Heat about 1 T of oil in a frying pan over med-high heat.
When the oil begins to smoke, pour in some of the pancake batter and swirl it around the pan. Not too much, because, with this recipe, the aim is to have a thinner pancake.
Once the pancake is showing air bubbles and the centre isn't too wet, flip the pancake.
Cook on the other side for about 30 seconds, then transfer to a plate.
Pair with your favourite toppings. I like to use maple syrup. My dad likes them with orange juice and icing sugar.
You can roll the pancake up, like shown in the picture, but it's your choice.
